Greens like collards, mustard, kale, and swiss chard are some of the most nutritious veggies you can grow for the fall. Straight from the garden, simply prepared, they taste absolutely delicious–even to the veggie-phobic!

Not sure how to cook greens? Here’s a quick recipe that should work for most any of them:
- Heat about ¼ cup of olive oil in a pan.
- Add some sliced garlic and let it soften.
- Add greens (a big bunch, de-stemmed and roughly chopped) to the pan along with ½ cup of white wine or stock.
- Cover and cook until wilted and soft but still green. Add salt, pepper, chile flakes, and some red wine vinegar to finish!
